Just curious, for maybe I've missed it in the settings, or was removed from new version.
Instead of the dynamically adjusted, (height and size), column menu,
is there an option for a more static,(fold out page) looking menu?
Where each column has a predefined maximum height limit,
and possibly same bottom start point, filled in with white space,
as in fake ones below.
I'm sure I've seen someone's real Classic Shell pictures of it somewhere.

No, there is no such option.
I think StartMenuX is closer to what you are looking for.

but other ones I saw before, had height lower.
Could have been manipulated.

What you see in those screenshots is a single menu with multiple columns. What you are asking for is multiple menus that are aligned. Not the same thing.
