Where do I remove the Recent Items list?

Which recent items list you mean - the one of documents or programs? Also, which Windows OS are you running? If you only wish to clear the document list which is called "Recent Items" in the right side column of a 2 column menu, right click it and select "Clear recent items list". You can also delete individual items from this list by hovering over them or selecting them with the keyboard and pressing the Del key.

Windows maintains this list of recent documents. To permanently disable it, tell me your version of Windows as the location of that setting is different in each OS. Disabling it at the OS level also disables jumplists.

You can also go to the Customize Start Menu tab of Classic Start Menu Settings. Click on "Recent Items" and press Del. If you remove it this way, the list will be maintained (and jump lists for programs too will be maintained) but from the right side column of the menu, "Recent Items" will be removed.

I mean the Recent Programs and I'm using Windows 8.1.

To not show the Recent or Frequent programs, open Classic Start Menu settings. In the search box of the Settings window, type: recent and select "Don't show" option. You can fill up the empty space by pinning programs there or switch to the single column classic style.

In the START list of my programs I want to allow each programm to show a list of the last 5 documents (e.g. with IrfanView the last 5 created or opened jpg files - see attached picture).

With Win 8.1 it was possible with a click on the tray (under "properties" & second tab) to uncheck the showing of documents, then click on apply, and to check it again. Then the list was "clean" again and ready for new 5 documents. This tab has disappeared in Win 10. Does one of you know another trick with Win 10 to delete this list with one click (not every file separately) and to keep regardless the listing feature?

That setting is moved to Settings app (Win+i) -> Personalization -> Start. Turn it off and on again.
