is it possible to keep using the new windows 7 menu, but use the traditional tree display in it, instead of the schizophrenic alphabetic order view of the shortcuts to the applications? |

I'm assuming you mean "the new Windows 10 menu", not 7. Classic Shell does not modify the native Windows 10 menu in any way. |
