The big problem of the W8 start screen was that all programs showed in an unorganized bunch of tiles, with only a cosmetic group option to "organize" it. Now this mess has been moved to the start menu, with all unused apps on a primary position in that menu, without an option to "hide" these in a folder and even without that group option. As could be expected so it won't make me use the Windows 10 start menu instead of the Classic Shell menu.

Would it be possible to do the following in the Classic Shell Menu:

1 Organize apps in folders (now all apps are in the same long list, and that lack of organizing is both in Windows 10 and in the app section of the Classic Shell menu)
2 Show (live) tiles separately like it is done in the Windows 10 menu.

Showing live tiles is currently not possible, as windows 8/8.1 does not provide an api for 3rd parties to use them. It may be possible in windows 10, but that remains to be seen.

IMHO, folders are good only for a bunch of shortcuts of the same app, or program suites. For apps which have exactly 1 shortcut, jumplist-like categories inside the "apps" submenu of the Classic Shell menu seem like a better idea. Those categories could be user-defined.
