I am currently using Start Menu X, but am not happy with it so checking out CSM.
Problem with Start Menu X is that it shows every item in any of the folders in the Windows 7 Start Menu folders.

I want to customize the replacement Start Menu program to show only those items I always use.

In Start Menu X if I delete any item, it will also delete that item from the Windows Start Menu Folders. I queried them and they said I had to purchase the pro version to do that. :-(

So my question is - If I use CSM, can I delete an item from CSM without that action deleting that same item from the Windows Start Menu Folders?

The Classic Shell menu also shows the contents of the Start Menu folders. If you mark some files or folders as hidden they won't show up in the menu though.

To mark any item as hidden, you must right click that item and open its Properties. From the General tab, check the 'Hidden' checkbox in the Attributes section. That way they won't be deleted from the Windows Start Menu folders but will be hidden from the Classic Start Menu.

Classic Start Menu also offers you a Most Frequently Used programs list as well as a Most Recently Used programs list. If you use the Frequent list, the main menu will show you the programs you use most often. Above that, you can also pin manually the items you always use. The All Programs will then include the full list which you don't need always.

Of course, if you use Classic single or two columns style, you can completely customize anything. For example, you can remove the Programs item completely from the Customize Start Menu tab and build your own menu with subitems.
